These air fryer egg bites are soft, fluffy, and full of flavor. Made with simple ingredients like eggs, cottage cheese, spinach, and peppers, they’re a quick breakfast or snack you can prep ahead.

As a dietitian, one of my favorite things to do is take popular restaurant or café favorites, like Starbucks egg bites, and recreate them at home in a way that’s more affordable, nutritious, and easy to make.
Cooking them in the air fryer is not only faster but also makes clean-up easier.
They’re worth making because you can batch 12 at a time, and they reheat great. That means breakfast or snacks is sorted for several days with minimal effort. They’re also versatile. You can mix and match your favorite veggies, herbs, or cheeses depending on what you have in the fridge.

Why You Will LOVE Air Fryer Egg Bites
Less time to cook - Egg bites in the oven take about 20-30 minutes to cook. Egg bites in the air fryer take less than 15 minutes to cook!
Great meal prep breakfast - If you want a healthy breakfast ready for you, prep these and just warm them in the morning.
Customizable - You can add whatever mix-ins you like. If you have leftover cooked veggies from dinner, add them in!
Kid friendly - Kids love finger food and these are perfect for that.
Nutrition - 5g of protein per bite and only 50-60 calories.
Key Ingredients
The complete ingredient list with measurements can be found in the recipe card below.

- Eggs — Use fresh large eggs for best results.
- Cottage cheese — I used 2% fat cottage cheese for creaminess and protein. You can swap for Greek yogurt or ricotta if you don’t like the texture of cottage cheese.
- Milk — A splash of 2% milk helps loosen the mix. Any milk (dairy or unsweetened non-dairy) works here.
- Spinach — Finely chop so it cooks evenly and blends into the egg mixture.
- Bell pepper — Red, yellow, or orange peppers give sweetness and color.
- Cheese - I like to use feta, this adds saltiness and flavor without needing extra seasoning. You can use parmesan, cheddar or mozzarella if you prefer.
- Salt + pepper — Simple but essential for flavor. Adjust to taste.
Dietary Substitutions
Standard:
- Gluten-free: Naturally gluten-free as written.
- Dairy-free: Use unsweetened soy or almond milk, and replace cottage cheese and feta with dairy-free alternatives.
- Vegetarian: Already vegetarian-friendly.
- Vegan: Use an egg replacer (like Just Egg) and plant-based cheeses, though the texture will be different.
To make it higher protein or lower calorie:
- Egg whites: You can replace some or all of the eggs with whites. As a guide, 2 egg whites = 1 whole egg.
- For a leaner, higher-protein version, use 12 egg whites instead of 6 whole eggs. However please note flavor will be compromised.
- For better taste and texture, I recommend a mix — like 3 whole eggs + 6 egg whites. This keeps some creaminess from the yolks but lowers calories.
- Using carton egg whites is convenient and helps avoid waste from leftover yolks.
- If you go all egg whites, blending the mixture with cottage cheese and milk will help prevent the bites from turning out too firm or dry.
- Cottage cheese: Choose fat-free or high-protein versions for fewer calories and more protein.
- Feta cheese: Reduce the amount for lower calories, or swap in a lighter cheese.
- Veggies: Add more spinach, peppers, or other vegetables to bulk up the bites with fiber and volume without extra calories.
Recipe Variations
Flavor ideas (Starbucks-style and more):
- Bacon & Gruyere — Add crumbled turkey bacon and shredded Gruyere.
- Red pepper & Monterey Jack — Similar to the Starbucks’ roasted red pepper bites.
- Mushroom & Swiss — This gives an earthy and savory flavor.
- Herb & Goat Cheese — Fresh dill or parsley with creamy goat cheese. This is one of personal favorites.
- Sausage Egg Bites: Add chopped pre-cooked chicken or pork sausage along with the cheese. This will also increase the protein.
- Pesto Egg Bites: Add a tablespoon of pesto to the mixture to really enhance the flavor.
Serving Suggestions
- With a slice of whole grain toast or guinness brown bread and avocado for a balanced breakfast
- As a high-protein snack between meals
- Packed in lunchboxes alongside raw veggies, crackers and hummus

Equipment
Silicone Muffin Liners: These are reusable, which I love and very easy to clean.
Air-Fryer: This recipe can also be made in the oven, but the air-fryer is quicker and gives the muffins a crispier finish.
How To Make Egg Bites In an Air Fryer?
A complete list of ingredients, amounts and instructions is located on the recipe card below.

- Preheat your air fryer to 150°C / 300°F.
- Place the veggie mix-ins (e.g., chopped spinach & diced bell pepper) and crumbled/shredded cheese (e.g., feta/cheddar) evenly into the silicone moulds (makes 12).

- In a large bowl, whisk together the eggs, cottage cheese, milk, salt, and pepper until smooth.

- Pour the egg mixture evenly over the fillings in each mold, filling each about ¾ full to allow room for the egg bites to rise.
- Carefully place the filled molds into the air fryer basket.

- Cook for 12–15 minutes, until the egg bites are set and lightly golden on top.
- Let cool slightly before removing from the molds.
Expert Tips
- Chop everything very fine, you don't want big chunks of the veggies to take over.
- Preheat your air fryer for even cooking. If your air fryer doesn't have a preheat function, just leave it run for a few minutes first.
- Don’t overfill the molds. Fill to about ¾ of the way as they rise slightly while cooking.
- Silicone molds usually don’t need oil, but if yours tends to stick, a quick mist of oil spray helps.
- Once finished, allow to cool slightly before removing from the tray.
Storage Instructions:
- Fridge: Store in an airtight container up to 4 days.
- Freezer: Freeze on a tray, then transfer to a freezer bag for up to 2 months.
- Reheating: Reheat egg bites in the air fryer at 160°C / 325°F for 3–4 minutes, or microwave for 30–60 seconds.
- Reheating from frozen: Place frozen egg bites straight into the air fryer and reheat at 160°C / 325°F for 6–8 minutes until warmed through.
How to Create a Balanced Meal with These Egg Bites
In my online dietitian consultations I am frequently preaching the balanced plate model with my clients.
To make this recipe fit the balanced plate framework, pair 2–3 egg bites with:
- Whole grain toast or oats (carbs)
- A side of fruit or vegetables (fiber)
- Optional avocado or nuts (healthy fat)
This combo helps keep you full longer and balances blood sugar.

Nutrition Notes
Each egg bite contains ~50–60 calories and 5 grams of protein. I usually recommend enjoying 3 egg bites as 1 serving, but you can adjust based on your needs and hunger levels.
Eggs provide high-quality protein and B vitamins like B12, which support energy levels. Cottage cheese adds extra protein and calcium. Spinach and bell peppers bring fiber, vitamin C, and antioxidants. Together, these air fryer egg bites are a nutrient-dense option that works well for breakfast, snacks, or meal prep.

Yes, you can also bake these egg bites in the oven. Bake them in a regular muffin pan lined with silicon cups for around 20-25 minutes at 300°F. Ensure that the eggs are set before removing them from the oven

Yes, they’re a similar style — soft and creamy, but lighter and more customizable at home.
