Instructions
First, preheat your air fryer. If your air fryer does not have a preheat function you can run the machine at 300F for 3-5 minutes.
Place the mixed veg and crumbled/shredded cheese evenly into the silicone molds
1 handful spinach, 1 bell pepper , ½ cup shredded or crumbled cheese
In a large bowl, whisk together the eggs, cottage cheese, milk, garlic powder, salt, and pepper until smooth. You can also use a blender if you don't like the texture of cottage cheese.
Pour the egg mixture over the fillings in each mold. Fill to about ¾ of the way as they will rise slightly when cooking.
Carefully place the filled molds in the air fryer basket.
Cook for 12–15 minutes, until the egg bites are set and lightly golden on top.
Allow the egg bites to cool completely before removing them from the silicone cups.
