About This Greek Yogurt Bark Recipe:

Introducing your new favourite sweet snack that is also healthy! As a dietitian, I am a big fan of Greek yoghurt because of its high protein content and versatility in sweet and savoury dishes. It makes a great base for healthy desserts. This recipe is also very easy to prepare and can be stored in the freezer.

Basic Ingredients for Yogurt Bark:

To prepare this effortless and delicious Greek yoghurt bark, you'll need the following:

Base Ingredients:

• Greek yoghurt (opt for a plant-based alternative for a vegan twist). I like to use plain non, flavoured yoghurt, but you can also opt for ready-flavoured varieties like vanilla or strawberry.
• Nut butter (both peanut and almond butter work well).
• Honey, maple syrup, or another liquid sweetener
• Vanilla extract (optional)

Toppings:

This can be anything you fancy, but good suggestions are:

• Sliced banana
• Other fresh fruits like strawberries or blueberries
• Graham cracker crumbs
• Drizzled melted chocolate
• Drizzled nut butter
• Assorted nuts and seeds such as walnuts, peanuts, pecans, hemp seeds, or pumpkin seeds
• Mini marshmallows

Nutritional Benefits of Greek Yogurt Bark:

Greek yoghurt is high in protein, and it's really good for you. It’s rich in important nutrients like protein and calcium, and adding a source of protein to our sweet snacks can help to slow the rise in our blood sugars, keeping levels stabilized and helping us feel fuller for longer. Regular yoghurt also has protein in it, but Greek yoghurt contains more.

It’s a source of healthy fats. Thanks to the use of nut butter, this Greek yogurt dessert is not only high in protein, it’s also a source of healthy fats from the nut butter. If you have a peanut allergy, try using almond butter or sunflower seed butter.

It’s low in added sugar. If you use plain Greek yoghurt and add honey to it, you can better control the added sugar content of your yoghurt bark recipe. This way you can customize the sweetness exactly to your liking.

It can help add variety to your diet. If you add a mixture of fruits, nuts, and seeds on top, it can help you reach the target of 30 different plant foods each week for better gut health.

How to Make Greek Yogurt Bark :

• Mix Greek yogurt, nut butter, honey, and vanilla extract in a bowl. Transfer the mixture to a baking sheet lined with parchment paper. Spread the yogurt mixture onto the parchment paper as evenly as possible, and then it’s time for toppings!
• Personally, I like to top my frozen Greek yogurt bark with melted chocolate chips and swirl the chocolate over the Greek yogurt mixture with a toothpick. But add whatever and as many toppings as you like.
• Next, it’s time to freeze the bark! Yogurt freezes in about 2 hours, so place the baking sheet in the freezer for a minimum of 2 hours, ideally 3-4. Once frozen, chop it into pieces and enjoy!

Storage Recommendations for Yogurt Bark:

The yogurt bark can be stored in the freezer for up to a month. For optimal freshness, I recommend storing the pieces in a sealed freezer bag or container. This ensures convenient access whenever the craving strikes!

Top Tip

Line your baking sheet. This will help to remove the bark easily from the tray, if you don’t line it, the yogurt will freeze to it and it will be really tough to remove. Use parchment or wax paper to line the entire surface of your sheet pan.
