- Chickpeas: The base of this recipe. Canned chickpeas work best here since they're already soft and ready to roast. Drain and rinse well, then dry them thoroughly before roasting.
- Cheddar cheese: Finely shredded cheddar melts and crisps into a sheet as it cools. Pre-shredded cheese often has anti-caking agents that stop it melting as smoothly, so shredding a block yourself gives better results if you have the time.

Expert Tips for Making Cheesy Chickpea Chips
Pat the chickpeas dry more than feels necessary. Any leftover moisture steams the cheese instead of letting it crisp.
Keep the cheese layer compact rather than spread thin. A thin, patchy layer is more likely to burn before it sets into a crisp sheet.
Watch the second bake closely after the 8-minute mark. Cheese can go from golden to burnt quickly, especially around the edges.
Let it cool fully before breaking it apart. Warm cheese will just bend and stretch rather than snap into chips.

You can air fry the chickpeas in the first step at 400°F or 200°C for about 12 to 15 minutes, shaking partway through. For the cheese layer, I'd still recommend the oven, since it's easier to get an even, flat sheet on a baking tray than in an air fryer baske

Crispy Cheesy Chickpea Chips (High Protein Snack)
Ingredients
- 1 400 gram / 15-ounce can chickpeas, drained and rinsed about 240 grams (1½ cups) drained
- 55 grams cheddar cheese finely shredded (about ½ cup or 2 oz)
- ½ teaspoon garlic powder
- 2 tablespoons Parmesan finely grated, optional
- Black pepper optional
- Your favorite dip for serving
Instructions
- Preheat the oven to 425°F or 220°C. Line a baking sheet with parchment paper.
- Dry the chickpeas very thoroughly using a clean kitchen towel or paper towels. Removing as much moisture as possible helps them become crisp.1 400 gram / 15-ounce can chickpeas, drained and rinsed
- Spread the chickpeas across the prepared baking sheet in a single layer. Roast for 20 minutes, shaking the tray halfway through to help them cook evenly.
- Carefully transfer the roasted chickpeas to a bowl or plate.
