These crispy cheesy chickpea chips are made by roasting chickpeas until crunchy, then baking them over a layer of cheddar for a dippable, protein-packed snack.

Instructions
Preheat the oven to 425°F or 220°C. Line a baking sheet with parchment paper.
Dry the chickpeas very thoroughly using a clean kitchen towel or paper towels. Removing as much moisture as possible helps them become crisp.

Spread the chickpeas across the prepared baking sheet in a single layer. Roast for 20 minutes, shaking the tray halfway through to help them cook evenly.
Carefully transfer the roasted chickpeas to a bowl or plate.
Sprinkle the shredded cheddar onto the parchment paper in a compact, even layer.

Arrange the roasted chickpeas closely together over the cheese, filling in any large gaps. Sprinkle over the garlic powder, Parmesan, and black pepper, if using.

Return the tray to the oven and bake for another 10 minutes, or until the cheese has melted and is golden around the edges.
