This healthy cottage cheese pasta sauce is a creamy, protein-packed alternative to traditional cream sauces that's ready in just 15 minutes. Perfect for quick weeknight dinners!
1cupcottage cheese(240g) full-fat or low-fat, I recommend full fat
112 oz jar roasted red peppers, drained340g, drained weight of 220g
2clovesgarlicminced
¼cupgrated Parmesan cheese(28g) plus extra to sprinkle on top
1tablespoonolive oil
1teaspoonpaprika
½teaspoondried oregano or Italian seasoning
½teaspoonred pepper flakesoptional, for a bit of heat
Salt & black pepper to taste
¼cuppasta waterif needed to thin the sauce
Instructions
Blend the sauce: In a blender or food processor, combine cottage cheese, roasted red peppers, garlic, Parmesan, olive oil, red pepper flakes, oregano, salt, and black pepper. Blend until completely smooth.

Heat it up: Pour the sauce into a pan over medium heat and let it warm through for 3-4 minutes, stirring occasionally. If the sauce is too thick, add a splash of pasta water to loosen it up.

Toss with pasta: Cook your favorite pasta according to package instructions, then drain and toss it with the warm sauce.
Serve & enjoy: Top with extra Parmesan, fresh basil, or a sprinkle of chili flakes for a finishing touch.
