Peach Ricotta Toast

Ingredients

  • 2 ripe peaches sliced
  • 1 tablespoons light olive oil or any neutral flavoured oil
  • A pinch of salt
  • ½ cup ricotta cheese
  • 1-2 tablespoons honey plus extra for drizzling
  • juice and zest of half a lemon
  • 2 tablespoon pistachios chopped
  • 2 slices of whole-grain or sourdough bread
  • Fresh mint leaves optional, for garnish

Instructions

Roast the Peaches:

  • Preheat your oven to 400°F (200°C). Toss the peach slices with olive oil and a pinch of salt making sure they are all evenly coated. Spread them out on a baking sheet lined with parchment paper and roast for 15 minutes, flipping halfway until they’re soft and caramelized.

Whip the Ricotta:

  • While the peaches are roasting, combine the ricotta, lemon juice, lemon zest and honey in a bowl. Whip until it’s light and fluffy. You can use a hand mixer or simply whisk by hand.

Toast the pistachios (optional)

  • As your oven is going to be in use with the peaches you can toast your pistachios using a non-stick skillet or frying pan over a hob or stovetop. You do not need to put any cooking spray or butter in the skillet. Roasting the nuts in a dry skillet is more effective.
  • Use a medium heat and toast for 6 to 8 minutes, depending on your stove. Stir continuously to avoid burning. The pistachios will give off a nutty, roasted smell when they are done. Remove the pistachios once they turn light brown.

Toast the Bread:

  • Toast your slices of bread until golden brown. You can do this in a toaster, on a griddle, or in the oven.

Assemble the Toast:

  • Spread a generous layer of the honey-whipped ricotta on each slice of toast. Top with the roasted peaches, then sprinkle with chopped pistachios. Drizzle a little extra honey on top, and garnish with fresh mint leaves if you like.
