This easy Guinness chili is a hearty one-pot beef recipe made with lean minced beef, kidney beans, bold spices, and a splash of Guinness stout for deep, rich flavour. Ready in under 40 minutes and perfect for meal prep.

Instructions
Soften the vegetables: Heat the olive oil in a large heavy-based pot over medium heat. Add the diced onion and red bell pepper. Cook for 6 to 8 minutes, stirring occasionally, until softened and lightly golden.

Brown the beef: Push the vegetables to one side. Add the minced beef to the empty space and let it sit undisturbed for 2 to 3 minutes to develop colour. Then break it up and continue cooking for 6 to 8 minutes until nicely browned all over. If the pan looks dry or anything sticks, add a small splash of water and scrape the bottom.

Build the flavour: Add the minced garlic, tomato paste, chili powder, cumin, smoked paprika, oregano, and chipotle (if using). Stir and cook for 1 minute until fragrant.
Add the liquids: Return the vegetables to the pot. Add the chopped tomatoes, drained kidney beans, and Guinness. Stir well and bring to a gentle simmer.
