Equipment

  • 1 air fryer If you don't have an air-fryer you can bake these in the oven instead

Ingredients

Healthy Homemade Ranch

  • 1 cup greek yogurt
  • 2 tbsp buttermilk
  • salt & pepper to taste
  • 1 tbsp chopped dill
  • 1 tbsp chopped chives

Cauliflower Wings

  • 1 large Cauliflower head cut into florets
  • 1/2 cup Franks Hot sauce
  • 1 cup Panko breadcrumbs
  • 1/2 cup Parmesan (grated)
  • 2 tsp Paprika
  • 1/2 cup olive oil
  • 1 tsp garlic powder

Instructions

  • First, preheat your air fryer to 350°F. If your air fryer doesn't have a preheating option you can run the machine at 350°F for 2-5 minutes. Leave the machine running for about 3 minutes for smaller air fryers. Leave the machine running for about 5 minutes for larger air fryers.
If you don't have an air fryer, preheat the oven to 425°F and line a baking sheet with parchment paper.

Make the cauliflower

  • In a large bowl, combine the olive oil, hot sauce, paprika, garlic powder and a generous pinch of salt and pepper.
  • Add the cauliflower florets and toss to coat.
  • Add the panko bread crumbs and grated parmesan and toss again, pressing the mixture into the florets to help them adhere.
  • Now begin to remove your florets from the bowl and place them evenly on the baking sheet (if using the oven) or on the air fryer tray. Do not stack them all on top of each other, or they won't get crispy.
  • TOP TIP: I recommend using your hands to transfer each cauliflower floret across and press as much of the batter as possible into the floret for the best well-coated wings!
  • Roast until tender and golden, about 20 minutes in both the oven and the air fryer.

For The Ranch

  • In a medium bowl, stir together the yoghurt, buttermilk, chives, and dill and season with salt. Add 1 to 2 tablespoons of buttermilk to thin as needed.
  • Serve the warm cauliflower bites with the ranch alongside for dipping.
