The Original Baileys Cheesecake | Irish Cream No-Bake Cheesecake
This is a no-bake cheesecake recipe with a thick biscuit base, creamy baileys, and cream cheese filling. Grated chocolate is also added to the filling and drizzled on top.

Base: 160 g butter 400 g digestive biscuits Filling 600 g cream cheese 40 mls baileys 100 g icing sugar 300 mls double cream (whipped) 100 g grated milk chocolate Garnish Grated chocolate or toppings of your choosing, e.g. Maltesers, chocolate buttons, etc.
Melt the butter in a pan. Remove from the heat and add the crushed biscuits. Mix well until all the biscuits have absorbed the butter.
Press into the bottom of a 7inch springform LINED tin (lined with parchment paper). Place in the fridge and allow to set for one hour.
Lightly whip the cream cheese, baileys and icing sugar together.
Fold in the whipped cream and grated chocolate.
When smooth spoon evenly onto the biscuit base.
Refrigerate and allow to set for a further 2 hours.
Once set remove from the springform tin and decorate as desired.
