How To Make This Feta Pistachio Dip

Step One: In a food processor, combine the olive oil and pistachio nuts. Pulse for about 1 minute or until the mixture is well combined, scraping down the sides of the bowl as needed.

Step Two:
Add Feta and Herbs: Once the pistachio mixture is combined, add the feta cheese, coriander leaves, chopped dill, and garlic powder to the food processor. Pulse for another minute until everything is well incorporated.

Step Three:
Add Yogurt and Lemon: Scrape down the sides of the bowl and add the Greek yogurt, lemon juice, and zest (if using). Pulse briefly to combine.45 g Greek yogurt,30 mls lemon juice
Adjust Seasoning: Taste the dip and adjust the seasoning as needed, adding salt to taste.

Creamy Feta & Pistachio Dip
Ingredients
- 50 g olive oil 4 tablespoon
- 100 g shelled pistachio nuts
- 300 g feta cheese 2 cups crumbled
- Handful of coriander leaves
- 1 tablespoon chopped dill
- 45 g Greek yogurt 3 tbsp
- 2 teaspoon garlic powder
- 30 mls lemon juice 2 tablespoon (juice of approx ½ a lemon)
- ½ teaspoon Salt more to taste
- Optional: lemon zest
